The why between each step matters as much as the step itself. Every recipe teaches you something — and as the lessons compound, you learn to think like a chef, bringing your own dishes to life.
Case in point: I love chicken parm. Tradition says marinara and penne. My wife loves vodka sauce and spaghetti.
A recipe-follower is stuck. But if you know why the sauce is there — acid and richness against a fried cutlet — vodka sauce isn't breaking the dish. It's translating it.
So I built our version from scratch. Same foundations. Her favorite dish now, not just mine.
